Blueberry Pancakes on this beautiful Saturday morning!
I will start by saying that pancakes are not normally in my top food groups. But when I made these pancakes the first time I knew it certainly wouldn’t be the last! All summer long I had looked at the in season blueberries. It seemed only fitting that when they were out of season would I actually do something with them. So I woke up, brushed my teeth and made the very short journey to the grocery store.
Now something you will learn about me very quickly is my love for altering other peoples recipes. It drives my mother crazy! I am constantly tasting things and thinking of ways to improve them. So with that being said, I picked up a box of pancake mix…
2 Cups of pancake mix
1 Cup of milk
2 Eggs
2 Table spoons of oil
and then the additional Sarah add ons,
1/2 of a cup of sour cream
1 container of blueberries
and last but not least the zest of one whole lemon
For the first drink of the week I figured we would start with something on the easy side!
You can pick any type of campaign that you prefer and mix it 50/50 with fresh apple cider! make sure to chill both before mixing in order to have a perfectly cold glass of champ-apple
